Wine: Pannier Brut Sélection Champagne
Course: Chilled oyster on the half shell with strawberry–Champagne mignonette, cucumber, cracked black pepper, and lemon.

SLOTH – Effortless Indulgence
Wine: Vigneti del Sole Pinot Grigio
Course: Chilled cucumber and green apple velouté with lemon, fresh dill, crème fraîche, and rye crisp.

GREED – More Is Never Enough
Wine: Frank Family Chardonnay
Course: Butter-poached lobster over sweet corn and roasted shallot risotto with Chardonnay beurre blanc, crispy leeks, and herb oil.

ENVY – Covet What Others Possess
Wine: Cantine Garrone Prünent Valli Ossolane
Course: Wild mushroom and ricotta agnolotti with brown butter, sage, roasted chestnuts, truffled mushroom jus, and aged Parmesan.

PRIDE – Above All Others
Wine: Round Pond Kith & Kin Cabernet Sauvignon
Course: Rosemary-seared lamb loin with potato pavé, glazed baby carrots, whipped chèvre, and Cabernet reduction.

WRATH – The Fire Within
Wine: K Vintners Creator Cabernet/Syrah
Course: Charred beef short rib with black garlic purée, smoked onion, roasted shallots, crispy potatoes, and dark cherry–Syrah reduction.

GLUTTONY – One Final Indulgence
Wine: Mullineux Straw Wine
Course: Warm almond and honey cake with roasted apricots, mascarpone cream, candied walnuts, and golden caramel.
