The Essex Resort flips the typical cooking class on its head - you're not just watching demonstrations, you're actually chopping, sautéing, and plating a three-course meal under chef guidance at their Cook Academy. The two-night package loads you up with a hands-on class where you do the work, then shifts you to spectator mode for an intimate interactive dinner at Junction where the chef handles the cooking while you focus on eating. You leave with an Essex-branded apron as a souvenir of your kitchen time. Daily breakfast at The Lazy Goat Tavern comes included - one juice or milk, coffee, and your choice of entrée or two sides per person. Meal gratuities are already covered, though alcohol runs extra. Junction dinner covers one order from each course with upcharges for premium items, and you'll want to book your cooking class and dinner reservations as soon as you finalize your room booking since both require advance scheduling. The package requires a two-night stay with at least five days advance notice, and availability depends on Cook Academy class schedules - check their current offerings at essexresort.com/cooking-classes or call (802) 878-1100 to coordinate timing. This works best when you can align your dates with a class that interests you rather than trying to force the timing.
